What model injectors are they Bosch?
What's the fuel pressure at?

I've never seen a set of Bosch 42 injectors work hopefully yours do.

Both tunes don't appear to have anything real silly going on with them. The one labelled "Phil" appears more well developed but the target AFR tables are a bit odd and targeting quite rich in low load areas, however much more sensible than the other one.

You could have something as simple as a blocked fuel filter causing lean fuel or the tunes have too much timing for the quite high compression ratio and it didn't show up on the dyno, vs now showing an issue on the street possibly.

I hope you have ARP rod bolts with a 7200rpm limiter lol

The problem i had with phils was it it was very rich all the time down low. Had lots of issues with cruise running in the low 10 afr and into the low 9 when touching the throttle

Phils tune was making 327hp. But it had 25lb injectors but tune was set to 19lb.
Barrys tune made 362hp and was fitted with the 42lb injectors and tune was set to suit

Did you ever go back to the dyno shop and ask for a touch up?
