Hmmm ... What I learnt here was that the A/C compressor was the main reason for the different belt size of a VS and VY L36 engine.

Now if I compare an L36 VT to an L67 VT, the normal belt sizes are 6PK2830 (Gates/Dayco) and 6PK2830 (Gates) / 6PK2845 (Dayco), respectively. So from this I conclude that, all things being equal, the L67 serpentine belt should be 0-15mm longer than an L36 one. With a VS A/C (your case), that would be 6PK2720-2735, with a VT A/C, 6PK2830-6PK2845. i don't understand how you've ended up half-way between the two.

My original vs v6 engine was 2725

Yes, that seems about right. That's very close to the 2720 size that Gates and Dayco list for it.
