Example. If I’m coming around a corner and I give the car approximately 25% throttle, the AFR goes to between 10.0-11.0 and then leans out to a reasonable value.
Which AE table is it and what values should I attempt?

I'd say it would be your acceleration enrichment table.
Make small incremental changes by reducing the number in the AE decay (I think it's called) table and see if that helps.
I had the same issue, a blip of the throttle even in neutral would drop it down to around 10.5 then shoot back up to normal.
