Starting out on a MAF

My project has been to up spec my VS Series II 5.0L V8 manual ute to series 3 spec. This started when I replaced the engine with a roller 5L from a wrecked VT Series 1. Hindsight, this is a big headache!
I finally put the new/modified engine loom on my ute yesterday and hooked up the PCM running a RT modified DRRR thanks to VL400.
So now I can actually have a play with the tuning side of things. I connected to the PCM this morning to check it's all working, just need to educate it on reading the VSS as I'm running the T5 not Getrag box, everything else seems to be fine at this point.
Currently editing the ADX for the VT V8 (yoda69's) to suit the VS Series 3 V8.
I know most of you seem to hate MAF based systems, but are there any tips on where to start with regards to tuning/tinkering? I am new to tuning anything more than a lawnmower/chainsaw/2 stroke nitro model engine so have a bit to learn.
I have a larger MAF from an LS1 sitting around, wondering if it would be worth setting that up? Currently the airbox pipe is the smallest restriction so I will be looking at that...
I am yet to get a wideband, looking at the MTX-L.

Holden VS Series II S pack Ute
Engine: Stock VT Series I 5.0L V8 (roller cam)
Engine Loom: VS Series 3 V8 with getrag wiring removed and replaced with T5 wiring from Series 2 loom with VSS (Hall effect) connected to D2 on PCM
original O2 sensor replaced with 4 wire heated type.
PCM from a VT Series 1 SS (16234531) with a NVRAM conversion from VL400 running DRRR RT mod bin
Gearbox: Boarg Warner T5 5 speed manual with Xtreme CGM25105HD Organic Clutch
Exhaust: Ceramic coated Pacemakers into twin 2.5" high flow cats into a single 3"
Dif: 3.08 LSD ABS Live axle
