Only one word - Why? I cannot see any added value and many negatives including more things to go wrong.

If you want it just to be on a switch just cut the violet wire to the oil pressure switch then put a switch in the wire from pin a6 to the fuel pump relay allowing the Ecu to control the fuel pump then when you hit the switch the relay will deactivate and cutting the violet wire stops the bypassing if the relay allowing it to run without the relay

Lowered reliability as there are more parts in the circuit controlling the pump.
Higher chance for operator error - accidentally killing the pump by flicking the wrong switch in the heat of battle.

KISS - keep it simple stupid. If it does not add speed or important functionality then it is a "like to have" as opposed to a "need to have"

Safety is assured with the standard systems and I cannot see anything that such a switch would add.

I can say from first hand experience, before i put EFI on my gemini, I had a carby on it and having the fuel pump run only with oil pressure is not real good, it does work once you get oil pressure, but that can mean a lot of cranking before the motor starts ..... in particular if your using carby and the bowl is empty, you can drain the battery before it fires !! .... I know your not using carby but just food for thought.

also the ignition on prime and the fact the pump cuts when the engine stalls is a benefit I wanted...
