I don't have the original memcal fitted so what you are saying is that the jumper should be on the j .
If I was to fit the old memcal would the tune in it work with the 12p

A memcal can clip to the rear of the NVRAM to provide extra features such as cylinder select.
Set to M and let the memcal do that or set to J and use the jumpers on the NVRAM.

Thats right. Or if it has a knock filter thats right for the engine it can use that from the memcal too.

remove RW before you go any further to protect the contents of the nvram before you plug things around.

See if the car runs like it did without the nvram and with the old memcal in place just to prove everything else.

Ok, so you know something has changed with the car. Going back a bit, you said you swapped some wires when you had no RPM signal but you also said it ran ok to start with. So i'd put them back. Must have been a loose connection, rather than incorrect connection.

To make sense of the logs you need the ADX that matches the contents of the memcal. Does the memcal have a 4 letter code on it (for identification)?

Still over fuelling if it's not running the fuel pressure regulator should not allow the pressure to go over standard is the 50lb enough to cause the over fuelling.

I dont know. 25% over.... I'd expect it to run, but poorly. But It seems certain somethings pretty badly wrong on the fuel side. Can you pull an injector connector off an put a test light between the pins and crank it and see if the light blinks or is stuck on? Which makes me think also, fuses and relays ok?
