I would strongly suggest not using wideband VE learn in your case. You will lose another engine as there are too many other variables that are going to need adjusting. It will not instantly setup the VE table and get everything spot on, do the hard yards with logging and manual VE adjusting along with temp correction tables. Once you have everything close can use it to help with the final small adjustments if you want.

With temperature corrections, the stock values should be in the ballpark so dont get too bogged down with that. Your first concern should be your VE table. Also note that you should be tuning a warm engine so the warmup stuff is out of the picture. Then once it runs ok warm, if it still has issues at cold, then you start looking at the cold start things.

It starts fine everytime.
I was wondering what should be turned off while doing the ve tables?
things like, accel enrichment, (intake temps if this affects ve table), is there anything i should have turned off while doing the ve tables?
My plan was to lift the back wheels up with my crane and take the back wheels off and put the hose dribbling on the brakes while doing some cruising and powewr runs etc to get some load with rear brakes/handbrake on etc. so i could see what was happening and listen for knock better with the hose and funnel (knock sensor) into cab.
I'm still waiting for injectors and couple of other things so just mucking around at low load at this point as to not max the injectors out and lower revs. Just getting some hands on play time before the bigger injectors arrive.
The 775 bluetops should be good for about 500 hp? As long as i don't let the engine rev up too much and boost it I think i should be pretty safe on the crane.
Just need to know if i have to turn things off while doing the ve tables.

Regarding the size of the injectors - I dont think you should be thinking in terms of horsepower, as many things can affect this. If your spark has more in it and your VE is out you will still max out the injectors but wont see the horsepower for it. Watch the injector duty cycle to see how your going. Keep it below 80%.

also, to give you an idea, those blue tops are good for < 320 hp if you run them at 100% duty cycle, far from 500hp

I wonder why so many guys with 355 and 383 strokers use them if they are only good for that much hp?
most good strokers with decent intake and heads running high comp can hit 500hp easily?
any features in ose12p to turn off whiledoing ve tables?

With only 300 odd hp potential from the bluetops... No wonder i blew it up, it's a wonder i never busted the pistons aspirated, she mush have been running lean as? then when i boosted it with around 30 deg timing... poor old pistons.
The pressure in the cylinder under detonation must be incredible. The detonation easily busted a few of the piston tops off... I got one out and flogged it with the hammer for a couple of minutes to see how strong they were and couldn't bust em...!!

yeah in a mild 355 they work, id say you may know some people overinflating their horsepower estimates
. in an N/A car you can run 13:1 fuel ratio, but in turbo, you need to run 11.5:1 - 12:1 to keep things cool so it reduces the potential power output your injectors can handle somewhat. on an n/a you might get 380 hp close to the limit.

My car always felt gutless, that's why i decided to turbo it.
was running too low compression for low end response... and too small intake (banannas) for the tope end where the large cam was designed to work.. it was all wrong but this time i have higher hopes. (the old comp was around 130psi cranking)
and new is up around 170psi) which i find odd because the old pistons had a 27cc dish running 0 deck height, and the new pistons have a 22cc dish but are 45 thou down the hole. I'm now running smaller cam.
Just goes to show what a difference a bigger cam does to low end compression.
