I was thinking of making a type of engine plate, would mount to each chassis rail and connect to the block in the original engine mount points and then go under the sump which would add to chassis strength too, still not decided if i'll do that or just make mounts for each side separately

That front cross member looks big and solid (heavy)? does it really need any extra re-enforcement around the front chassis rails?

yep solid mounts on engine and rubber on gearbox ...
straight 6's are nicely balanced so solid mount is no issue plus then you get to feel the lumpiness in the whole car hehe!

Work was done and reference was consumed! 
So we decided to add a piece of tapered steel under the chassis rail (can see it in the last pic), firstly to get the cross-member angled correctly and also to get the front a tad higher .....
Also you can see string lines to get the whole deal squared up!

Got started on making some engine mounts - originally I had planned to weld them directly to the chassis but with a straight 6 that means long posts sticking out that makes it hard to get the engine/gearbox in and out of the engine bay without disconnecting them first, and even then it would be a pain, so I thought a bit with some reference, and came to the conclusion I needed something close to the chassis that would unbolt to allow easy access and so this is what I came up with.
I also found a use for some 1-3/4in roll bar pipe offcuts!
Once the mount is connected to the chassis there will be another plate that bolts to the top of it and this attaches to the round tube which is then welded to the plate on the block.
with the help of Firebug last night we worked out all the geometry and the above pictured unit, now its just a matter of replicating it for the other side and then welding it all in!
Firebug: I know you took a few pics last night, if you have any that show something I haven't captured above feel free to add them in
